Our winery is supported by a pioneering underwater maturation winemaking project, endorsed by the University of Alicante, which guarantees, through a standardized process, the evolution of wines.
To achieve these results, our wines have been individually selected from within the main Designations of Origin in Spain, based on their characteristics and potential for evolution.»
This is a 100% Albariño varietal wine made with hand-selected grapes grown on the Condado do Tea estate. Before vinification, a portion of the «flower must» is separated from another portion of the must that has been cold macerated with the skins for 24 hours. This process allows for a greater aromatic expression of the skins, without losing the fruity aromas of the must. Once this process is complete, fermentation takes place in stainless steel tanks, followed by 3 months of aging on the lees.
The wine is then subjected to underwater aging for 7 months at a depth of 24 meters in the Mediterranean Sea off the coast of Ibiza.
On the nose: high intensity. Floral and fruity aromas with a marked presence of lees. Stone fruit and tropical fruit notes predominate.
On the palate: voluminous and well-balanced, creamy with a well-integrated acidity. Fruit flavors (apple and stone fruit) stand out. Great structure. It has an intense fruity aftertaste that confirms the olfactory aspects. The flavor is sweet, honest, smooth, and fruity.
100% Tempranillo. It is produced directly in 225-liter French oak barrels for 14 days at low temperatures, with 4-5 daily punch-downs, where it undergoes alcoholic fermentation, followed by malolactic fermentation, in search of aromatic complexity.
Finally, it is aged in new French oak barrels for 9 months.
Underwater maturation for 7 months at a depth of 24 meters in the Mediterranean Sea, off the coast of Ibiza.
On the nose: very powerful, showing the essence of Rioja Alavesa wine. Compote black fruits stand out, along with notes of licorice, tobacco, and spicy touches. Barrel aging is much more pronounced after underwater maturation in the form of vanilla and roasted coffee.
On the palate: we perceive a great abundance of ripe black and red fruits, almost compote-like. Perfectly integrated acidity, resulting in a well-structured high volume in the mouth. In short: fruity, powerful, and mature without losing the freshness of a young wine.
100% Tempranillo. The grapes are hand-harvested from the winery’s own vineyards with limestone soils located in Ribera del Duero. The wine is aged for 18 months in new French oak barrels and then undergoes a long bottle aging in the winery for optimal integration of the high tannic load provided by the new oak.
Submarine aging for 7 months at a depth of 24 meters in the Mediterranean Sea off the coast of Ibiza.
On the nose: fruity at first, then developing notes from the French oak aging such as smoke, spices, leather, roasted notes, and cocoa.
On the palate: black fruit accompanied by well-integrated and structured wood, without any rough edges, which provides a full-bodied, powerful, and very rounded wine, leaving a pleasant persistence and memory in the mouth. Respecting the essence of the wine, which is, and must be, the grape. It augurs great potential for storage and evolution.
